Non-targeted high-resolution mass spectrometry study for evaluation of milk freshness

Milk freshness is an important parameter for both consumers' health and quality of milk-based products. Up to now there have been neither analytical methods nor specific parameters uniquely define milk from a complete univocal chemical perspective. In this study, 8 molecules were selected identified as responsible aging, using liquid chromatography–high-resolution mass spectrometry approach followed by chemometric data elaboration. For model setup marker selection, 30 high-quality pasteurized fresh samples collected directly the production site analyzed immediately after storage at 2 8°C 7 d. The markers then validated challenging with set 10 samples, not previously analyzed. Our results demonstrated that within study can be successfully used correct classification non-fresh complementing enhancing parallel evaluations obtainable through sensory measures.
